In the region of the Altos, south of Mexico, in Santa Catarina mines, Oaxaca the renowned Arellanes family has been producing one of the most famous blend in the region since the late 18th century. Eleven generations of continuous distillation of mezcal with legendary commitment to artisanal production and experimentation have culminated in a distillate that is both complex and accessible. Don Amado Mezcal is made from 100% mature agave hearts that were cooked underground, after grinding, is fermented together with its pineapple fibers to obtain a rich character to agave. The juice is distilled twice in small ceramic clay pots and reed.
